A Pinch of Salt
About 1/8th tsp Red Wine Vinegar
1/4 an onion
1/4 cup brown sugar
2 tbs djon mustard
Cloves, Ginger and Pepper to taste
2 Salmon filets
Rice - However much you want to make for 2 people
Chicken Broth - Enough to make your rice
Curry to taste
Make your rice however you normally would - but I recommend using broth instead of water.
Pre-heat oven to 350
Mix all of the ingredients except the salmon and curry in your food processor.
Put salmon in pan - pour tomato mix over salmon and bake in the oven for half an hour. (If you like your salmon well done. Cook for about twenty minutes otherwise.)
Mix curry into rice - lay a bed down on a plate top with salmon then spoon some of the tomato mix from the pan over the salmon and rice...
Serve. (Could probably get away with enough sauce for 3 - 4 people)... but it would stretch the sauce a little thin.
